Weekend entry

Swam on Friday 50x25m within 1/2 hour
Swam on Saturday 40x25m outside pool with current under 1/2 hour

Friday we ate out at a friend’s where I ate too much including some sweets which are not a great thing to eat.
Saturday we ate sensible all day. For lunch I made my new found peach and mushroom dish on a bed of greens.

In a frying pan on the stove add the following:

½ teaspoon of olive oil, turn stove on high
1 sliced portobello mushroom
1 slice of onion
4 small peaches – cut into quarters
¼ of a small habanero
1-2 tablespoon of balsamic vinegar
1-2 tablespoon of soy sauce
Ground pepper to taste
Mixed greens or spinach

Get the mushrooms and onion going and then after a minute
Add the balsamic and soy stir fry for a short time
Add a little water if all the liquid is gone
Add the peppers and stir fry for another short time
Turn the heat down to medium high and cover the pan
If required add a little water if all the liquid is gone
When the peppers start to soften (about 2 minutes)
Add the peaches and a couple of turns of ground pepper
Move the peaches around until coated
Cover and turn the heat down to medium and let cook for 2 minutes
Once the peaches appear to be softening from the heat remove the entire pan from heat
Arrange the greens or spinach as a bed on a 2 plates
Give one final stir to the peaches and divide the entire amount into two
over each plate of greens.
Enjoy.

Total cooking time about 6-8 minutes, total prep about 2-3 minutes

Missed a day ooops!

I missed Thursdays entry, I will attempt to get caught up today.

On Wednesday, I ate what I consider good meals throughout the day. No junk. I have still been able to stay away from any packaged food. Wednesday was my light activity day with a 40 minute walk.

On Thursday, I ate a good breakfast, a great lunch, however, I didn't eat dinner until 10:00pm. We were out and didn't have the opportunity to get something. For activity, I swam 70x25m at an easy pace; 10x10x60 lbs. press.

Up some, but, not a problem. So far, maintaining an eating schedule seems to be the challenge as well as eating enough calories to maintain a steady burn.

I have lunch out today so, I will be looking for something light to eat!

Bad lunch day

Yesterday's activities: 1/2 hour elliptical, 10x15x50lbs. press, 50x25m (under 25 minutes)

Yesterday's food: oatmeal with flaxseed and blueberries; veal cutlet on a bun with onions (ouch!); home made bread slice, 2 hm oatmeal cookies, millet with raisins, 2 almonds, 3 filberts; grapes and raisins; bow tie whole wheat pasta with tomato, garlic, onion, basil, olive oil, 1/4 habanero pepper, parmesan cheese (very little); carrot and two pickles; water and two African nectar teas.

Approximately: 2200 cals a little better, however, the lunch I am sure had some trans fats and a lot of other bad stuff. I was at a business lunch and I panicked when asked what I want. I will have to plan ahead a little better.

Day two looks good

Yesterday's activities included: 64x25m in the pool (just under 1/2 hour), 1/2 hour walk

Yesterday's food: oatmeal with blueberries and flaxseed oil; millet with raisins, 4 almonds, 5 filberts, 2 apricots; green salad with tomato and fat free Italian dressing, piece of home made bread; potato with salsa, white kidney beans with red onion, spinach, ginger, garlic, olive oil, lime juice; one small Greek style pork cabob; 2 home made oatmeal cookies, 2 home made ginger snaps, blueberries; salad with tomato and fat free Italian dressing again. Only water all day.

The calories total only approximately 1700, which is too little. I will attempt to increase this today.

And they're off!

The challenge has begun. The winner will be the one who manages to reach the 185 lbs. mark by Thanksgiving weekend 2006.

The official weigh-in took place at 10:10pm EST on July 23, 2006. Eric weighed in at 207.8 lbs with 24.8% body fat. Jason weighed in at 210.0 lbs with 28.7% body fat. Eric is approximately 6'1/2'' and Jason is approximately 6'1/4''. 20 years of experience separates the two. Who will be victorious? Return here to follow along. Encouragement is always welcome.

Amazing how much can be lost during the night?!?
